Some important issues to remember about food serving in corporate meetings or home

 We live in a multicultural world. Everybody has different food habits, fasting days, and spice levels. So, when we arrange a corporal party or even any house party, the host must consider all of these.

If we need to arrange a food party in the daytime during the month of Ramadan, Muslims won't be able to eat anything. In this case, I recommend serving food in a box. So, if anyone wants to eat right on the spot, they can eat it. Anyone who wants to take it home or away and eat it later can easily do it.

When we serve food, we should make a small note by mentioning main ingredients like beef, mutton, Fish, or Halal. We can also mention whether it is vegetarian or vegan.

If we can provide two kinds of food, Halal and vegan, then everybody will be able to enjoy it. Nonveg people can eat halal meat, and vegetarians can enjoy vegan food.

Again, everybody can enjoy the beverages with non-alcoholic drinks, like a mocktail.

Still, we should be careful about allergic items. That is why that tiny note in front of the food is important. You can mention that it has nuts or milk products, etc.

বালতীতে করে ডাল (Lentil served in a bucket)

নেপালের বর্ডারের শহর কাকরভিটা থেকে পোখরা প্রায় ১৬ ঘন্টার পথ, বাসে। চলার পথে বিভিন্ন সময়ে বিভিন্ন হাইওয়ে রেস্টুরেন্টে আমাদের খাওয়ানো হয়েছিল। বললাম হাইওয়ে রেস্টুরেন্ট, কিন্তু আসল চেহারা একটু অন্যরকম।

মতিঝিলের বিভিন্ন বড় বড় বিল্ডিংয়ের ফাকে যে রকম ঝুপড়ির মতো খাওয়ার জায়গা থাকে, অনেকটা সে রকম। 

একজায়গায় দুপুরে খেতে গেলাম, মানে আমাদের বাস যেখানে থামালো খাবার জন্য। আমাদের আগে কয়েক দল বাস যাত্রী খেয়ে গেছেন। বহু কষ্টে একটু পরিস্কার জায়গা খুজে বের করলাম, যেখানে বসলে অন্তত: জামায় ঝোল লাগার ভয় কম। খাবার দেখে অনেকেই ঠিক করলো, খাবে না। আমাদের প্যাকেজের লোকদের হাকডাকে রেস্ট্যুরেন্টের কর্মচারীরা ছুটাছুটি শুরু করলো। একজন বয়স্ক মহিলা মাঝারী আকারের বালতীতে ডাল নিয়ে টেবিলে টেবিলে ঘুরতে লাগলেন কার লাগবে। যার লাগে টিনের মগে করে দিতে লাগলেন (স্থানীয়রাও ছিল)। বালতির চেহারা বাথরুমের বালতির চেহারার চেয়ে খুব একটা ভাল মনে হলো না। আর ডাল দেয়ার সময় ডালে তার হাতও ডুবে যাচ্ছিলো। এটা দেখে আরও কিছু লোক খাওয়া বন্ধ করে দিল।

পরে ভুটান বর্ডারের কাছে ভারতের খশবু রেস্টুরেন্টে এর উন্নত ভারসন দেখেছিলাম। ওখানকার খাবার বেশ ভাল এবং পরিস্কার। আমাদের দেশে "কড়াই গোশত" রেস্টুরেন্টে যেমন ছোট্ট কড়াইতে গোশত দেয়, তেমনি এরা ছোট তামার বালতিতে করে ডাল দিল। দেখতে খুবই সুন্দর। বলা বাহূল্য সবাই খুবই মজা করে খেল।

আমার মনে হলো, এটাই কি এই এলাকার রীতি? বালতিতে ডাল পরিবেশন করা? রান্নাও কি বালতিতে করে?

From Kakarvitta (Nepal's town at Nepal-India border) to Pokhara we made 16 hours bus journey. During this time our bus stood on several highway restaurants. Well I am naming them highway restaurant, but their structural and food was very poor. Those restaurants looked like our restaurants which are situated between big buildings in Motijhil.

Let me give you an example, at noon our bus stopped in a restaurant for lunch. Several groups of bus people were already taken food there. It was really difficult to find a place where we might have less dirt on table. By watching the situation few of our group people decided not to take anything in lunch. As our tour guide started asking for serving food the restaurant people started moving and serving food. One old lady brought a bucket (Not clean) as we use in our bathroom, made of tin and that was full with lentil. She took a mug (Made of tin) to serve lentil from that bucket to the plates. When she was taking lentil from that bucket her wrist was also get dip into the lentil. By watching this part, some of us stopped taking food.

Later at Bhutan border, in India we take food at Khusboo Restaurant. The food was clean and delicious. There they give us lentil on a cute little copper bucket. In the way we get meat in a pan at "Korai goshto". Everybody enjoyed that lentil.

I thought, actually this bucket lentil is in their culture... Do they cook lentil in bucket too?
