Biography 14: Kotkoti (Bangladeshi sweet snacks)

Kotkoti is a sweet snack.

Earlier in Dhaka (Bangladesh), there was some professional guy who use to go to the houses to collect cristal bottles to recycle. Instead of giving money, they use to give food, Kotkoti. They bring the food in a round box, made with tin. They had a small hammer and an iron pin to break the hard Kotkoti and measured it. Then give it to the children of the house. It was a very popular snack for children. In those days, people didn't use plastic bottles, so it was easy for the kids to collect bottles made of glass. Now a day, it's not available in Bangladesh as the way it was.


I remember I used to stand by the Kotkoti man and wait patiently when he will give us Kotkoti. My cousin brothers didn't want to miss a bit. While the man was breaking the Kotkoti one of my brothers use to grab all the powder fall on the box before Kotkoti man stopped him, he uses to run away.

After moving into Canada, I have found almost the same dish! One of our colleagues who is from German made this dish for us. He said this is German's traditional dish. His family owns a restaurant. They are all are very good at cooking. He already cracked and bring us small pieces of Kotkoti. I'm sorry, I forget the German name of it.

জাপানিজ রোস্ট বিফ, থুক্কু বাঙালী টক মিষ্টি খাসির গোস্ত (Japanese beef roast, actually Bangladeshi sweet and sour mutton curry)

আমি সব সময়ই রেসিপি দেখে নতুন নতুন ভাবে রান্না করি. আমার তো আর নিজস্ব শেফ নেই. কে নতুন নতুন ভাবে রান্না করে খাওয়াবে (যেখানে রেধে খাওয়ানরই কেউ নেই). রান্না করতে আমার খারাপ লাগেনা। তবে মাঝে মাঝে রান্না না করে থাকতেও ইচ্ছা করে.

I always try to cook new items by follow recipe. You know, I don’t have any personal chef, so I had to cook by myself. I don’t hate cooking. But sometimes I wish if someone sometimes cook for me.

আমি রেসিপি দেখে (যা আমার কালেকশনে আছে) একটার পর একটা রান্না করার চেষ্টা করি. আর সব বিফ খাবারকেই ধরে নেই, মাটন (গরুতে এলার্জি আছে আমার). এবার পেলাম জাপানিজ রোস্ট মাটন (আসলে বিফ ছিল). এখানে মাটন প্রথমে রসুন, সয়াসস আর চিনি দিয়ে সিদ্ধ করে নিতে হবে. এরপর পরিবেশনের সময় পেয়াজ পাতা, আদা বাটা আর রসুন কুচি দিয়ে পরিবেশন করতে হবে.

I follow recipe from my collection and cook food one after another. This time I found a recipe on Japanese mutton roast (Actually beef roast, I have allergy on beef so had to turn all beef items to mutton). According to recipe mutton has to be boiled with garlic, soya sauce and sugar. Then while serve we have to add onion leaf, grinned ginger and sliced garlic.

আমি বুঝলাম, খাবার সময় কাচা আদা, রসুন বাঙালীর মুখে ভাল লাগবে না. তাই এর বাংলা ভার্সন বের করলাম. তবে জেনে কি কি লাগবে মাটন রোস্ট বানাতে...

I understood, Bangladeshi people won’t like to take mutton with raw garlic and ginger. So, I have to change the recipe a bit. Here is my version of mutton sweet and sour curry.

What you need:

১. খাসির গোস্ত (৬৭৫ গ্রা:)
২. ৩টি রসুনের কোয়া কুচি
৩. সয়াসস (১০০ এম এল)
৪. তেল (১০০ এম এল)
৫. চিনি (১.৫ চা চামচ)
৬. ৩ সেমি টুকরো আদা বাটা.
৭. পিয়াজ কুচি (২ চা চামচ)

1. Mutton (675 g)
2. 3 cloves of garlic zillion cut
3. Soya sauce (100 ml)
4. Cooking oil (100 ml)
5. Sugar (1.5 tea spoon)
6. 3 sm ginger massed

কিভাবে রান্না করবেন:

১. প্রেসার কুকারে খাসির গোস্ত, একটি রসুনের কোয়া কুচি, সয়াসস আর চিনি দিয়ে ঢেকে জোর আঁচে চুলায় বসান.
২. একবার সিটি বাজলে আঁচ কমিয়ে দিন. এভাবে ১০ মিনিট রান্না করুন.
৩. এরপর চুলা থেকে নামিয়ে, ভাপ বের করে ঢাকনা খুলুন.
৪. ঢাকনা খোলা অবস্থায় আবার চুলায় বসান, এবার জোর আঁচে.
৫. এখন গোসতে একে একে বাকি রসুন কুচি, তেল, আদা আর পিয়াজ দিয়ে ভুনতে থাকুন.
৬. মাংস যথেস্ট নরম হয়ে গেলে বুঝবেন রান্না হয়ে গেছে.

খেতে খানিকটা টক মিষ্টি.

How to cook:
1. Take mutton, one clove of garlic zillion cut, Soya sauce and sugar into the pressure cooker and put it on gas burner with full flame.
2. When you hear the whistle turn the flame in low hit and let it cook like that for 10 minutes.
3. Then take off the cooker from the hit and let all air go out and open the lid.
4. Put the cooker again on hit and this time with high flame
5. Then give rest of the garlic, oil, ginger and onion into the cooker and fry it till the mutton cooked.
It taste sweet and sour…

একবারে একটা তরকারী (All in one curry)


আমরা বাংলাদেশীরা সাধারনত: ভাতের সাথে ৩ ধরনের তরকারী খাই. ডাল, শাকসব্জি আর মাছ/গোশত। বাইরে থেকে ফিরে বা অসুস্থ থাকলে এত কিছু আর রান্না করতে ইচ্ছা করেনা। তাই তখন একবারে একটা তরকারী করতে পারলে ভাল. যেমন,

খাসি, ডাল আর সবজির তরকারী।

যা যা লাগবে:
১. খাসির গোশত ১ কেজি (আপনি নিরামিষভোজী হলে এটা বাদ দিবেন আর মসলা সব অর্ধেক দিবেন)
২. পিয়াজ কুচি আধা কাপ
৩. আদা রসুন পেস্ট ২ চা চামচ
৪. হলুদ গুড়া ২ চা চামচ
৫. শুকনা মরিচ গুড়া আধা চা চামচ (আপনি ঝাল পছন্দ করলে ২ চা চামচ)
৬. ধনে গুড়া ২ চা চামচ
৭. জিরা গুড়া ২ চা চামচ
৮. ছোট আলু ৫ টি (খোসা ছাড়িয়ে দিবেন)
৯. শাক সবজি আপনার পছন্দ মতো (বড় টুকরা)
১০ ডাল এক কাপ
১১. তেল ১ কাপ
১২ লবন স্বাদ মতো
১৩. এলাচ, লবঙ্গ  আর দারুচিনি ৪টা করে
১৪. তেজপাতা ২টি 

কিভাবে রান্না করবেন:

চুলায় মৃদু আচে প্রেসার কুকার বসান। খাসির গোশতের চর্বি কেটে ফেলে প্রেসার কুকারে দিয়ে দিন. তেল দিন. এবার একে একে বাকি সব উপকরণ গোশতের সাথে দিয়ে ভাল করে মিশিয়ে দিন. এবার আপনি ঝোল যতটুকু রাখবেন ততটুকু পানি দিবেন। যদি গোশত আর সবজি থেকে পানি বের হয়ে যথেস্ট ঝোল হয়ে যায় তো পানি দেয়ার দরকার নেই. এবার প্রেসার কুকার ঢেকে পুরো আচে দিয়ে দিন. একবার সিটি বাজার পর আচ কমিয়ে ২৫ মিনিট রাখুন। বাস হয়ে গেল আপনার সুস্বাদু তরকারী।

We, the Bangladeshi people usually take 3 curries with rice in every meal. They are daal (lentil) , vegetables and fish/meat. When you came from outside or you became sick, it’s really difficult for you to cook all these dishes. So, here I am giving you a simple way to cook all these at a time and it’s tasty too. This can be called

Meat, lentil and vegetables

What we need:
1. Mutton 1 kg (If you are a vegetarian then you can remove this part and you have to give all masala half from given amount)

2. Onion finely cut half cup

3.  Ginger and garlic paste 2 tea spoons

4. Turmeric powder 2 tea spoons

5. Coriander powder 2 tea spoons

6. Cumin powder 2 tea spoons

7. Red chili powder half tea spoon (if you like spicy then can add 2 tea spoon)

8. Small size potato 5 (you have pill of its skin)

9. Vegetables (whatever you like, make them big pieces)

10. Cooking oil 1 cup

11. Salt (according to taste)

12. Cinnamon, cardamom and cloves 4 of each

13. Bay leaf 2

14. Lentil 1 cup

How to cook

Put your pressure cooker on the gas burner in low heat and give every item one after another and mix it well. Then put the lid and make the hit high. When you hear the first whistle then again make the hit low. Keep it like that for 25 minutes. Then it’s done. You have your delicious curry. You can take it with rice or bread.

We understand more about our love to our country when we live abroad


We live in our country, we love our country. But how much we really love? We can understand it only when we go abroad. We feel great only to see another Bangladeshi, any Bangladeshi product or any good news about Bangladesh. We forget who is doing what, what is their status, we just felt this is another Bangladeshi and we love them.


In every occasion we felt we should go to Bangladesh. But then money, visa, job or other problems arises. But we love our country no matter where we live. That’s why, all Bangladeshi, no matter where they live, sang the National song together. Long live Bangladesh.
